I know the cheapest and quickest way would probably be a Ryanair flight from Stanstead. What are the alternatives?

You'd go to Irun on the Spanish border and get local transport back

Probably cheaper
You can catch the ferry from Portsmouth/Southampton to Bilbao/Santander and go back into France.
