I stayed all-inclusive at the Riu Buena Vista last November, it was a lovely hotel.

I would recommend the Barcelo Santiago in Puerto Santiago, a lovely resort on the west coast, approx 40 min from airport. Beautiful pools, great food and good location - not too busy in March. There's a bar across the road (Route 66) which has live entertainment most nights. (Ask for a room away from the road!)
