I have invited a couple around or a roast on Sunday, only to remember one of them is a vegetarian. I have never, ever cooked for a veggie! I am more than capable of taking recipes from google, but I'd like to know from the veggies of AB what they would like to see on their plate in the place. MrAC automatically shouted out that I should do a nut roast, which says to me that this is what I should avoid. I don't want the meal to be boring. Suggestions please!

This is a roast I do for Xmas and goes nicely with gravy and all the trimmings: 1 medium butternut squash Salt and black pepper, to taste 3 tbsp olive oil, plus a bit more to coat the foil in the loaf tin 1 tbsp thyme, fresh or dried 1 large red onion, diced 1 large leek, thinly sliced 2 garlic cloves, finely chopped 200g mushrooms, roughly diced 2 carrots, grated 2...

Mac cheese is good. I'd have it with sliced tomatoes grilled on top and a side salad.

How about mini pizzas with some wedges? Toppings could include tomatoes, sweetcorn, olives, mushrooms, leeks or whatever's popular with your gang.

Or vegetable curry and rice?



Make sure you give them some protein - you'd be surprised the number of people that don't know about basic nutrition. For vegetarians - nuts, cheese, beans or some mixed grains. I'd steer clear of the manufactured alternatives (Quorn ect). Morrison's have a nice range of frozen vegetarian savouries if you want to be lazy, but that would fit in nicely if you also serve them the veggies everyone else is having - just steer clear of the gravy!
Not all veggies are strict. I didn't eat meat because I didn't like it but I would eat food with meat products in them....like gravy made with meat juices. It was never a food fad just like not liking brussel sprouts is a food fad.

I'd phone your friend and find out how strict she is.
Woo hoo! I'm off the hook - I HAVE to go to Asda so I offered cyo pizza and the boy is thrilled, v happy mum!
I'm not a veggie - I just don't *have* to have meat all the time (so I don't).
Curried Dhal on basmati rice is nice served with some boiled veg eg broccoli.
I find red split lentils are the easiest to deal with for the dhal.

Thankyou everyone for your suggestions. Have successfully prepared the butternut recipe as suggested by Retro. Looks and smells nicer than my meal! I went for this so that I can serve the same as everyone else, bar the turkey. I'll let you know if it goes down well or pushed to the side of the plate!

I served my particularly fussy, veggie guest the butternut squash, she was delighted and really enjoyed it. Thank you all. I really enjoyed preparing it, too.
