What do these mean in relation to my new iPad Air?

IMAP is an internet email server service protocol that requires setup configuration on your iPad, including email account name / password, in order to send and receive email.

Not sure what SMAP refers to, unless you mean SMTP which is also another email service protocol.

If your email service provider uses an IMAP service then the following video demonstrates how to setup IMAP an on your iPad. Note that you will need the email providers IMap server address information, which you should be able to find on their web support page.
