Do not overcook squid as it will get really tough.
You should find it at a good fishmonger - get them to prepare it if it is a whole squid - remove the ink sac, etc. The stuff in batter - calmari rings - is passable but this doesn't give you any real option to cook. Go for the real thing, much nicer - sweet and tender meat,goes with a stack of sauces, nice and versatile.

Nice salad of fresh leaves and crusty bread is always a good bet - not tatties and cabbage...You want to taste the calamari and not all the rest of the stuff to go with it. Keep the flavours simple. Roasted or griddled asparagus; salad of beetroot, rocket, goats cheese and roast pine nuts..just whatever you like.
Stuffed squid is a meal in its self, so keep any extras nice and light if you try that one. If you are using a griddle, bear in mind that the squid will curl up as you cook. To make the tube stay a bit more flat rather than roll into itself, score with a sharp knife - don't cut through - the flesh into diamond shapes along the length of the tube when its opened out, and this will help a bit. tentacles curl up anyway and thats part of the appeal, so just let them as they cook.
A chilled white wine or beer if you fancy - think what you may have had on the hols...
Make a sorbet for dessert - just freeze some fresh fruit for 5 -6 hours and chuck into a blender and serve ina glass. Dead easy. Use tinned in fruit juice if you want. Bananas go all creamy if you use them like this. Peaches, pineapple - nice and easy way to finish a meal.
