Learning Cs5?

Is there the equivalent of a teach yourself CS5 for Dummies? I'm really struggling with this massive programme and I think I should like to achieve something, anything, before I go back to my hammer & chisel?

Yes, it's called youtube! However if you are truly a beginner you should look for 'basics' tutorials first so that you understand the concepts first such as tools, filters, masks and layers as these are fundamental to doing anything in the software, simple or complex.
The key is to understand WHY a step is performed father than just doing it because the tutorial says so.
