health kick starts tomorrow for every reason there is; I want to eat more dark greens but have no idea how to make them taste nice! Any ideas for how to cook things like spinach, chard, kale etc much appreciated!

I like spinach with sea salt and white pepper. Just put in the microwave for a minute or two. Eat with a poached egg, if allowed on your regime, otherwise a bit of ham, or similar.
Try Kale in a soup, delicious, you can add sausage if you wish.

I chop kale and spinach into my stir fries.
I can eat springs greens steamed on their own , love the irony (is that a word?) taste.
Spinach sandwiches are lovely.

Thanks! Is it possible to steam them in a microwave- I currently steam bags of veg but am not sure what to do with the massive leaves
Shred or cut smaller to steam, get a Microwave Steamer - not expensive.

Spinach should be cooked in oil or milk to counteract that, "Ugh !", taste.

I think that introduces more of an ugh taste. How do you cook it once you've put it in oil or milk?
I'm no expert but I think cooking in oil is frying, and cooking in milk probably poaching ? And it works as I've tried it. Simply heat your frozen spinach from the freezer, try it and you'll probably grimace and wonder how they get it to taste so good at the Indian restaurant. Of course, they cook it in excessive oil.
