Gosh I'm so jealous, I want to come with you too!
We did the CN tower in toronto, personally didn't find it up to much (sorry daff), but loved the Skylon tower at Niagara Falls.
We've been a couple of times to Niagara Falls, stayed in one of the fallsviews hotels, not right near the arcades etc, and had two meals at the Skylon Tower. its a revolving restaurant, and has some lovely views of the falls etc. The food was good, and I can heartily recommend their martini made with ice-wine (can't think what it was called now!), expensive but lovely!
Also depending on your interests, we did a wine tour of a couple of the local wineries, very interesting, free samples and not too expensive. Also stayed at Niagara on the lake, very pretty. Both areas get very busy in the summer.
If time you can go across to Quebec or Montreal from toronto on the train, really loved Quebec, not too bothered about Montreal, but will probably take you a full day to get there.
Vancouver is an amazing city too, you have to go to Stanley park, the views are fantastic, lots of walking to do. We also went on the ferry over to vancouver island, and trekked for miles (well seemed like it) to visit a lynn valley suspension bridge, again lovely views.
Whilst in vancouver we were recommended by the locals to visit tofino on vancouver island, apparently known as 'a little piece of heaven', biggest regret we didn't have time to go there.
The rockies are lovely if you have time to get up there, banff quite touristy, we prefered jasper-but might have been because of the time of year we were there.
Have a lovely time, take loads of photos, its a fantastic place, we want to emigrate there once we've saved up enough pennies!!
