I am going to cook it in a slow cooker (my first time), and freeze portions for another day.

Any tips, or do or do nots?

A well sealed oven has a thermostat that will turn on /off automatically when required low, continuous heat is required. I use electric fan oven. I can't speak for a gas /aga oven.
Slow cookers are great for those of us cooking for 1...and who are out for hours.
No point in being snobbish or precious about what we cook with...we use what gets the results we want.
Lamb is not usually tough, so doesn't really need slow cooking. Now, if you are talking about mutton, slow cooker is probably an excellent idea.
