In my week of household disasters put a pan of onions and mince on last night and promptly forgot about it (got distracted gossiping as you do). It is thick black. Boiling hot water and washing up liquid has shifted some. Any other bright ideas?

I work in a pro kitchen where we do 1,000 meals a day ( +15 Kg of bacon & 10 Kg sausages every morning just for breakfast rolls!), one chef in particular has a well earned reputation as a 'burn on expert'. I've never had to throw a pan out yet. Some take 2 or 3 days 'in the soak' but they always come clean in the end. Remember our pans are 'Missionary cooking pots' the littlest ones are 2 L the largest are 125 L .
Just seen that it is Stainless Steel. Eddie is right. I once had a damn good ss pan outside for a month in winter soaking, and scraping it now and again.The thing is with ss , you can give it a good scrubbing. I would avoid wire wool or brillo pads as they deposit tiny bits of steel that rusts into the pan surface. It still hangs on the pan rack and is used daily.
