Selling On Ebay Contract

I'm selling an expensive bike on eBay and I'm overly paranoid that once the person collects the money, if they pay via PayPal, they could take the bike and claim the money back. The bike is in perfect condition so I'm hoping this won't happen, but is there any way I can make some kind of mini contract saying they accept the bike is in good working order? If so how can I word it?

eBay & paypal have strict rules on refunds, there has to be a reason for the refund agreed between buyer and seller,before money is refunded.Once you have paid someone by Paypal you can not reclaim the cash unless the seller agrees to do the refund or Paypal make the refund due to a problem. Paypal will ALWAYS contact both buyer and seller first and give you a chance to sort out a problem.

^^ No proof the cash has been paid, the buyer could say he has no receipt even if he has been given one. He could say his/her signature was forged.
Paypal is safe for both sides. But we are almost certainly being too 'careful' the vast majority of people are not dishonest to the point where they try 'tricks'.

NEVER use PayPal if the buyer is collecting the item.
He can claim he never received the item and unless you can prove he did by providing a tracking number the buyer WILL get his money back.
PayPal only accept tracking numbers as proof of delivery - you can have signed contracts, receipts, photos of the buyer putting the bike in his car and driving off - it will make no difference.
