I have been given some bramley apples and have been requested to make individual apple pies with them.
Can I substitute the bramleys for the eating apples directly or will they need more sugar?

Take your pick. Must be easier to use a recipe for Bramleys than to modify one for a different apple variety.
yes they will need more sugar!! OG is right, I would look for a recipe that uses cookers. Personally i never use cookers in desserts, I always use a good eating apple.
Bramley are the proper apple for a pie. You can't make an apple pie with eating apples, you just don't get the correct texture. Eating apples for something like a Tarte Tatin or a flan but NOT an apple pie.
Sugar is a essential part of a apple pie, just follow a standard apple pie recipe.
