But I'm unsure the same person would result from it, who went into the freezer initially.
One normally complies with a dying wish if it is possible/feasible. Seems fair enough to me in this case. One should not give hope to deny the request afterwards.

If you believe in the human "Soul" then the body is now irrelevant so maybe these cryo criminals, ahem I meant cryo scientists might try and figure out how to entrap the "Soul" and put it into another body.
As others have said, who knows how far and what we may be able to do in the future.

Looking at it from that perspective: I don't think any soul needs entrapment. Did it need to be trapped to "attach" to the body of a baby about it be born ? There is a body suitable for a soul to experience life in; either one takes up the offer or does not.
If none take up the option, does the body remain a corpse, or does it activate as an "empty" zombie-like creature ?
