We hear lots in the media about processed meats and the like, being bad for you, blah, blah. Would home made sausages come into this category, or, does the term processed really mean additives?

I think the processing they are talking about at the moment is mainly the curing/smoking processes to increase the longevity of the product. Just cutting/mincing fresh meat isn't going to be harmful. British sausages provided they use natural casings and have no preservatives are not really what they are concerned about.
