Proper Cranberry Sauce !
I always make the Cranberry Sauce for Xmas in my family, and its miles better than those awful little jars of cranberry jam !
Fresh Cranberries
Sugar
Port
Orange juice
Orange zest
Simmer the cranberries in a very small amount of water...maybe a tablespoon. Add the zest and juice of a nice big Jaffa orange.
Add some sugar, a little at a time. Don't forget, you can put sweetness in but its difficult to take it out. In my opinion, it should be tart rather than sweet.
Add some port, a glass at a time.....as much as you like really !
It will all reduce down nicely and will set well into some jars.
This can be made as much in advance as you like, as it keeps very well in the 'fridge.
Much better than shop bought !
