About 20 years ago, I was staying in a cottage in Yorkshire, not far from all the locations that were used for filming "Last of the Summer Wine" We went to a Pub that Compo and the rest used to go to and nurse their half pints. On the menu was Yorkshire Pub, with beef and gravy ( note the Pud was mentioned first, before the beef ! )
It came in a huge dish, like a dog bowl. The Pud covered the dish and a piece of beef and some gravy was plonked in the middle, and it was delicious ! The Pud was very chewy though, not crisp like the way I make them.
And very nice it will be as well !

that is holmfirth I think .....
the yorkshire pud came first because there is lots of it and just a little flavouring of beef. In the Good Old Days you ate suet ( = Y P ) before meat to fill you up and spare the meat. My gt gt .....'s proud boast was that she served meat every day.
( In Egypt in 1978 my interpreter said " the labourers you are looking at will eat meat between once a week and once a month" even then I went "blimey !" and recollected my old .....)
