why does my dog roll in poo

why does my dog roll in poo and how can I stop him doing it, how can I train him not to do it

I have a westie that does it, It is so annoying! you can guarantee she does it just after a bath or been to the groomers, Cow Pooh is her favourite i have to be quick and grab her when we are across the fields otherwise she comes home with a lovely green streak across her, I think they do it for Scent reasons its to hide the smell of themselves so they can catch small animals, Thats what i got told anyway.
