Yes you can, we had them roasted instead of potatoes, just salt & pepper and olive oil and cubed, roasted with our roast chicken dinner - yum. We also like them cut into wedges,seasoned with smoked paprika,salt & pepper, a crumbled chicken stock cube & olive oil again baked. Mmmmm
Yes, we like sweet potato as chips too.
I never peel normal potatoes (unless I'm making mash) (or carrots) but for some reason we've always peeled sweet potatoes- even though it's not easy. I'll try leaving the skin on then and see what they're like.
