Because they're wrong. They do harm insomuch as they perpetuate sloppy and incorrect grammar.
Those who 'owned' the corrected signs seem happy at the alterations, so I can't see it as doing any harm.

I saw that on the news this morning...And I loved it! I like what he's doing,though I imagine he could be charged with property damage.
Ironic that you should omit the apostrophe from Greengrocers' in your title.
While sloppy grammar on signs does annoy me, it doesn't annoy me half as much as some self important, interfering weirdo on a power trip, skulking about in the dark with a specially made stick he's concocted to deface someone else's property. Makes me want to buy a shop in Bristol and put a sign up with endless apostrophes just to irritate him.

I left the apostrophe out because I wasn't sure if it should have gone between the r and s or after the s.
It depends how many greengrocers the apostrophes belong to. If they belong to just one greengrocer it goes between the r and the s. If they belong to a number of greengrocers it goes after the s.
Actually in this case either, as greengrocer could be read here as singular or plural.
I only came in for a cabbage.
Cabbage's in the far corner, Madam, 30p each.
