excuse my ignorance but my telly doesn't have Sky Atlantic channel - how do I get it, and record off it (I'm not staying up til 2am)?
You have to have Sky TV to get Atlantic.
I wouldn't bother, having seen trailers, it looks very weird!!!

Sky has exclusive rights to the UK showings - they may eventually sell repeat rights to a terrestrial channel (probably C5), but don't hold your breath.

do all Sky subscribers have Atlantic free, or do they pay extra for that?
Yes - it's in all Sky TV packages.

You can also watch it by getting a NOW TV box and subscription via your broadband supplier - I think it's about £6.99 a month, plus any start-up costs for the box.
Sky Atlantic is available with a Now TV Entertainment Pass. A pass costs £6.99 per month (with no contract). Now TV boxes are available in many big supermarkets for around fifteen quid. You automatically (with any type of pass at all) get access to catchup channels (such as BBC iPlayer) and other services such as Youtube. The Entertainment Pass gets you (as well as Sky Atlantic), Sky 1, Sky Living, Sky Arts, Fox, Gold, Comedy Central, MTV, ABC Studios, Nat Geo Wild, Comedy Central and ITV Encore.
