Dispensable Fifth

In extended chords why is the fifth interval so dispensable ?. On the guitar, if you play C9 on the inner strings starting at C on the A string, you have intervals of 1 3 b7 9. You can of course add the fifth (G) on both E strings at fret 3 but this chord sounds so good without the fifth. I know jazzers often use the fifth as a bass note and forget about the root which is usually covered by the bass guitarist.

After that, unless someone happens to dip into one of the now 'minor' categories - in this case Music teh question is unlikely to be seen.
Before teh revamp all the categories were always visible on the left and I'm sure I wasn't the only one who regularly dipped into check sections of interest such as Music, B&F etc, but now do it less often as we have to ' go round the houses'
