Asking for a relative ... when he flies from East Midlands Airport to Gran Canaria, why do Thomson go via Dublin without even landing there ?

Well, they would be crossing a very busy air corridor from the UK to the US and I hate to say this but no, that wouldn't be a problem because aircraft can just fly at different altitudes to avoid other traffic.
