....like, al dente is pasta's hard knock. So what's the Italian term for pasta what's bordering on the sloppy?

i called a couple of Italian restaurants, neither one of an Italian term. they both said you would call it soft, overcooked, welldone. my dictionary says: cuocere troppo- cook too long troppo cotto(a)-overcooked
