Does anyone know the name of the leather hats that the old jewish pawnbrokers used to wear? Mike Reid wore one in the movie Snatch.

I reckon they are commonly called a "Slouch hat". Originally made of fur, but then more recently in leather.
Called "Yarmulkes" when worn by male Jews
