6 Answers
Can anyone give me their easy moussaka recipe? I have to make it today and am full of head cold, it’s snowing and I don’t feel like doing it but these aubergines need to be used today! (I have ready made white sauce in jars if that helps: which is really rare for me). Thankyou muchly xx

Layer up with griddled aubergine and top with homemade kefalotiri sauce (or Parmesan / Grana Padano if you can't get kefalotiri).
To all my Ragus I add a tbs of my homemade feta, dill and sundried tomato pesto which thickens and gives amazing flavour. Recipe available on request.

WBM, it's useful if you have a coffee grinder or really good small electric mill.
I start by grinding some fresh bay leaves from the garden. I add some Parmesan and grind again. Then add some pistachios (or pinenuts, cashews or walnuts) and grind again. Then add a few garlic cloves, a few cubes of feta and a few sundried tomatoes and some chopped dill, grinding after each new ingredient is added. Add some water or olive oil to loosen the mix before grinding until you have a thickish paste.
