I bought a sprig of parsley yesterday of which I used very little and would like to freeze the rest. Previous experience tells me that herbs go all slimy when you defrost them. Is there a technique?

Just freeze it in a plastic bag. I don't defrost frozen parsley, just crumble it into recipes, works a treat for me. H.
Horty's right. You use it from frozen.

thanks for the advice
...or chop it up and mix with a little water, pour into an ice cube tray...just pop one or two into your recipes straight from frozen....
