i have just bought some duck breast from the local supermarket as it was on offer- i want to roast it; maybe with garlic or honey any other ideas.

and what temperature/length of time would be appropriate to roast 2 breasts assuming they weigh around 160 grams each.

Hi The T - Keep it simple - brown the breast skin down for 3 mins in very hot fat in a baking tray then turn and 3 mins on the other side.

Place in hot oven and cook for no more than 5 mins then leave to rest while you make up the rest of the meal. Cherries are in season now and are good with duck, or as it quite a strong flavour anyway, it can take asian spices as well, or garlic as you suggest.

Depends on how pink you like the meat. AS a guide, if its not a meat you are used to err on the slightly longer cooking then adapt to your taste.
