Lancashire Oven Bottom Barm Cakes

One of my fondest childhood memories is coming home from school to the delicious aroma of barm cakes cooking in the oven. Having now retired, I have really got into baking bread. No matter how hard I try, i cannot get that soft texture that typifies the barm cake. I always seem to end up with a hard crust.

I make Barm cakes from Paul Hollywoods recipe... They always come out of the oven with a soft crust.... they do need to be timed carefully but when done are lovely. Worth finding his recipe and giving it a try.
