Meat can be cooked rare, medium, or well done. (Raw or burnt too in some circumstances.)

I wonder if it's a British thing (or out of date thing) that pork has to be thoroughly cooked. I always have Iberian pork in my favourite Spanish restaurant on holiday and the chef insists it should be medium rare. Doesn't bother me.

Lamb should be very pink and it's perfectly OK to serve pork pink too.

i prefer crispy meats. Use to like medium rare but now i like rare. Lamb chops for me have to have a tiny bit of burnt fat on them. Delicious.
