Key word being double. The lily pad patch grows twice it's size every day, so half of what is seen when observing daily is new.

For fans of math, the equation follows.
X = Y * 2
Y representing the size of the lake the day before and X representing the new size of the lake.
Just realized I said "lake" and not "patches" during the explanation. Sorry for that.
