Don't Get It

Don't eat to many fish and chips, but when I do fancy them, then the chippy shop is good. Now working in a fish and chip shop is not rocket science is it, and normally very friendly and on the whole happy, ( unlike me today) What I can't understand is why none of the servers know how to apply salt and vinegar to those fish and chips.
You go in and ask for fish and chips, ( no problem there then) they scope up about 1 kilo of chips plonk them on the paper, then lay the whale on the top, then the problem starts, the whale on the top gets smothered in salt a vinegar, and not one chip gets any. So when you come to eat the fish, its burns your bloody mouth off, ( just in the one place) so you consume all the salt and vinegar in one go. What's the problem in leaving the fish to one side so as the chips get a chance. Surely anyone can sprinkle salt and vinegar EVENLY over food.
