I have Encarta Encyclopedia installed, and the dictionary which comes with it starts automatically on startup. There's an icon in the systrem tray (edict.exe).

How can I stop it starting automatically?

Click Start - run

in the box type msconfig

go to the startup tag and untick the edict.exe box.

click ok

choose to restart now or later..

when restarting, you'll get a reminder...click 'don't show this at startup' ... (stops it nagging you)
go to start->run - type in 'msconfig' click 'ok'. Click startup tab and uncheck box for edict.exe.
I was literally minutes behind you, naz_nomad, which is quite good for me.

Unfortunately this doesn't work. A new instance of EDICT is created in the Startup services list when the PC is restarted. I now have three entries for EDICT, two unticked and one ticked.
Is there an option in the EDictionary menu that allows you to specify whether it launches at startup? Quick Time player kept adding itself to my startup until I disabled it by editing my preferences. Just a thought.

Unfortunately Encarta Dictionary doesn't have a classic menu bar. I can't see any way to alter preferences. I think I'll have to uninstall Encarta and deselect the dictionary when I reinstall it.
