Don’t want to just boil/steam it, and don’t want anything too complicated either. Any ideas? Thanks.

Quarter cabbage and lay quarters in pan with 2 tblsps water ( or white wine, cider, apple juice) put on low heat with lid on the pan and braise, turning over the quarters until they are soft. Crank up the heat take of the lid and fry on high until the quarters are caramelised (brown) A squeeze of lemon finishes the dish, with maybe another blob of butter.
Well, thanks to a combination of all your suggestions, we had the most amazing meal tonight.
Shredded the cabbage, fried it in butter then added a splash of cider vinegar, put the lid on and turned heat off. In another pan, fried an onion and some leftover cooked potato, added that to cabbage. Found some leftover Christmas ham in freezer, cubed it and threw that in too.
Half a pot of leftover elmlea had two teaspoons of Dijon mustard stirred into it before adding it to the pan.
Scrumptious doesn’t do it justice. Thanks everyone :)
