Can I thaw it out and mix with mash, onions and peas to make rissoles and freeze some of them ?

I wouldn’t re freeze something I’d defrosted SK
Shouldn't be a problem as long as they're cooked properly before eaten, any bacteria will be killed.
Is the lamb raw or already cooked? If it's raw it would be fine to make the rissoles, then cook and freeze them. If the meat is already cooked I wouldn't re-freeze it in the form of rissoles (or anything else for that matter)
Yes providing you cook them well after defrosting, either on the side or in the microwave.

Okay dokey, sarnies it is then.
I wouldn’t re freeze something with meat that’s already been cooked and frozen, I would with veg or bakery stuff but not meat or fish.
The rissoles sound lovely. I’d make them then stick them in the fridge till tomorrow if you don’t want to have them today.
Sparkly do you have a hand held mincer (the type you can attach to a worktop) or a electric blender with suitable blades?

No Tony. I will have a lamb butty for lunch and the rest cold with chips tonight, living the dream.
Sparkly will keep you fed then, at least for today.
