Has made me realise what a good wife I should of been all these years, I’ve just knocked out two yummy ginger loafs and a batch of cheese scones......he’s spoilt now :0/

For more on marking an answer as the "Best Answer", please visit our FAQ.Soda Bread - I use a 50/50 mix of white & wholemeal flour, and fresh buttermilk (or add a squirt of lemon juice to the buttermilk if it’s been open a day or three). I also use baking powder rather than bread soda - it makes the whole loaf a bit lighter.
If I know the loaf needs to keep for a while, then I sometimes whisk a small egg into the buttermilk before adding to the flour mixture.
