Has made me realise what a good wife I should of been all these years, I’ve just knocked out two yummy ginger loafs and a batch of cheese scones......he’s spoilt now :0/

sanmac even scones go dry after 24 hours -these breads were made fresh every day and not meant to be kept -you could have tried to refresh it in the microwave or at least put it out for the birds -don't throw food out :-(
Soda Bread - I use a 50/50 mix of white & wholemeal flour, and fresh buttermilk (or add a squirt of lemon juice to the buttermilk if it’s been open a day or three). I also use baking powder rather than bread soda - it makes the whole loaf a bit lighter.

If I know the loaf needs to keep for a while, then I sometimes whisk a small egg into the buttermilk before adding to the flour mixture.

No banana bread? It seems to be the popular thing at the moment, along with sour-dough bread.

APG, at 1532, I'd like to feed the birds, but I live in a condo-complex and the Board frowns upon feeding them as the only birds that come around are pigeons and doves, and their guano makes a mess of the Common-Elements of the complex.
