Anyone know of any luxury hotels in Suffolk and Norfolk which have accommodation (chalets, cottages or whatever) in the grounds (so you don’t have to stay in the main part of the hotel)?

Don’t know if you’d consider Warner’s luxurious but they have chalets and lodges at their hotels in both counties
The Westleton Crown has some of its bedrooms located within the main pub but many are in the separate barns and cottages that form part of the site.

Don't be put off by it being a pub. It's very upmarket and a popular wedding venue. It's also very well-located, in a lovely little village which is close to the best parts of the Suffolk coast (such as Southwold and Walberswick).

Have to agree with Zebo the pigs is amazing and highly recommended
how do you plan to eat without going into the hotel
Fritton Lake between Beccles and Great Yarmouth has lodges in the grounds and an upmarket restaurant. I'm not sure if you have to be a member though.
