best way to cook beef

I'm cooking for five tomorrow and have bought a piece of topside of beef. I have bought beef in the past, sometimes it has been really nice and other times it has been quite tastless, what is the best way to cook beef to make sure it is tasty. Thanks.

Make sure that the cut has plenty of fat for roasting either on the outside of the cut or more importantly in the 'marbling' lines of fat on the inside. Always make sure that the beef is a nice deep red colour never bright red and 'fresh' looking. 'Fresh beef has not been aged and as such has no flavour.
Sear the meat first in a pan so that the juices remain within the meat whilst it's cooking. Open a bottle of red wine and deglace the pan with half a cap. Then transfer in to the dish you are planning to roast it in add garlic, bay leaves and a tin of chopped tomatoes. Roast covered to begin with and then open to crisp up. Make a gravy with the juices. Works every time
I cook all my meat in slow cooker (best thing i ever bought) i would put onions on and around it. Scrummy! Cook it so that it can stand for 30mins covered in foil before carved cos its so tender sometimes can be job to slice it properly. Then while its standing make gravy in slow cooker - very good cos keeps it hot for topping up gravy boats as needed.
