Rice.
Does anyone have any rules or tips for making "sticky" rice.
When I cook rice it's always separate grains and never clumped together. I've tried it in my rice cooker, my slow cooker and even tried it in the microwave oven but no success.

We have rice about 3 times a week and we only use Basmati ..
After listening to all kinds of ideas on how to get perfect rice every time, we tried them all, but now think we have cracked it now and just assume that it will be perfect every time.
For two people we use just under 'one measured cup' of rice.
Rinse the rice in a sieve under running water ..
Add to the pan..
Then add just one and a half cups of water ..
Bring to the boil .. and put the lid on..
Turn it off .. thats it. No simmering.. leave standing for at least 10 mins.
Then when you are ready to serve, just fluff it up with a fork.
It never fails.
We are having it tonight with a Balti .. the rice has been standing 20 mins at this point and I know it will be perfect, just when the bread is ready.
Should we have wine with this ?

Never thought of doing rice in a microwave have always boiled it.
Tonight I left the rice standing for 35 mins before serving .. it was spot on, really light and fluffy.
One for Pasta as I know she to has intolerances ..
Something new for tonight's Balti , I did Focaccia bread with Rosemary and Garlic. The recipe instructions served six .. I could only manage to eat half of it. It was superb !
It was yeast and dairy free, you must try it, only four ingredients and so simple to make.
Zabado .. when you get your tomatoes this year, make some of this bread and have a bowl of fresh tomatoes and basil with it and obviously a glass of wine. It will be a highlight of the tomato season... can't wait for the fresh fruit and veg.

From now on I'll use 1.5 times by volume water to rice, bring to the boil and then tirn off the gas and leave for about 10 mins, by which time it'll be perfect. I love saving gas! I still use a bit of ghee or oil to coddle the rice befor adding liquid, and I would usually add a bit of spice or stock powder to help the flavour. Peas can be added.
