Anyone have a good recipe? Also, can you tell me if shops like Tesco stock specialist ingredients I will need? Thanks

Tesco's and the other supermarkets stock the pastes for both green and red curries and i think it's just a matter of adding some coconut milk and following the instructions. alernatively, if you have a stockist near you, The Curry Company make an excellent ready made Thai Green Curry sauce, costs about �2.75
This is my usual recipe for salmon thai green curry but i have substitutes salmon for chicken and you can use any veg you have to hand. Obviously the longer ones to cook go in first ie potatoe in stead of butternut squash etc etc. Its really quick, simple and never failed me yet. Brown your chicken or other meat before adding:-

Salmon Thai Green Curry


1 tin coconut milk
2 tbsp thai green curry paste
glug of nam pla
diced butternut squash
veg eg mange tout, baby sweetcorn, pak choi etc
salmon fillet or 2 diced

Garnish - chopped coriander
Serve with boiled basmati or thai jasmine rice


In pan put coconut milk , curry paste and nam pl. Stir and add diced squash. Simmer til cooked. Add veg simmer bit longer, add salmon, bring back to boil. Scoff
Is it possible to substitute the coconut milk with something else? I am not over fond of coconut milk.
