Why oh why is there such a fuss about turkeys not being available for Christmas! I simply can't understand it. Is it essential to eat turkeys. To be honest I can't stand turkeys, but that's besides the point. There are lots of alternatives.

well I don't know because I got given one at the weekend . I asked would it be ok for Christmas ? I was informed that it should be great for Christmas if I put it in the freezer. But when I went to check on it this morning it was dead : ^(

I turn it breast down in the oven to make sure all juices fall to the breast and it makes it beautifully succulent

I just don't like the taste of turkey and turkeys curry yuk!!! I admit cold with pickle in sandwiches it's bearable.

Yes, that's the way to do it Bobbi, then turn it back over to brown it remembering to baste. Problem is so many don't do that which is why I hate going anywhere for Xmas. My mum was chief culprit

I have seen a few people though turning up the oven the brown the spuds off - the poor old turkey gets annihilated!
A whole turkey should be taken out about 30 mins before its ready and covered with foil and a tea towel and left to rest - the residual heat will finish it cooking and the juices will be flowing

I'm like the OP, no fan of turkey at all. I usually get some lamb, pork and gammon in for the holiday season.
Off topic I suppose but I'm about to make Toad in the Hole.
I think I have the general gist but is there any common mistake I should avoid. Or simple 'trick' to make it perfect. (Good enough to display on AB.....possibly)
make sure the oil in the pan is very hot before adding the batter
