My wife wants to collect my sons dog to walk it for him as they have to go for Covid test. Granddaughter and sons wife tested positive. Trouble is I’m high risk, though jabbed three times, and I fear that she may get infected and in turn infect me. Am I being irrational?

Not a bit irrational.
If you're worried it isn't irrational.
imo. they should all respect your position more and not put the dog's needs above your own.
Collect it at there gate. Unless there's reason to think she might catch it from the dog.
They can give him a good walk in the open air before they go. He should then be ok until they get back. So short answer NO!!!!!!

She walked the dog. She said she wore gloves and a mask to collect him. Time will tell.
In your condition I would seriously ask your wife to take LFT’s for the next seven days and distance herself from you
