I have been fairly good as in eating but because of hardly no movement at all with painful knees have just got on scales and have gained 7lbs.

That's a lot of weight. Am hoping when I start to move it will come off again.

Any thoughts.

You enjoy your food, in fact with pain in your knees, eating is probably the only pleasure in life that you have.

You are never going to be thin (slim) etc, so my advice would be to continue on your gastronomic path and when you get mobile, you will lose those 7lbs that you have gained.
what you weigh is probably 90% about what you put in your mouth, and 10% about the exercise you do
You can lose weight without movement
Or
Exercise your upper body
To put on half a stone - over what period is that?
are you breathless at all? It could be fluid if it's over a short period
Agree with bednobs. 'They' used to say, 'You are what you eat', and I think that's true.
