Fry them off to render the fat and put in a casserole dish chuck in onions and chopped apples, make a white sauce with cider or apple juice and cook till falling apart.

You could cook them in harissa and have them with a bit of salad, some rice or couscous and a dollop of tzatziki. They eat a lot of pork in the far east - maybe google some Vietnamese recipes.

If I grill them, I like to melt some cheddar cheese on top of them and serve them with new potatoes. Otherwise, casseroling them in dry cider, together with some veg (and perhaps some mustard too), works well for me.
I marinade mine in some ginger, garlic, soy sauce and hoisin sauce with chinese 5 spice, then grill later, they're delicious, my brother does them in a pressure cooker with potatoes and garlic and they are delicious, he has been following the same recipe for years, ever so simple and when we know he's cooking them, we find an excuse to call to his for dinner :)
