It sounds like you actually want to get away from your girlfriend, which can be done more simply than exiling yourself to the back of beyond. Dump her and change your phone number.
On the career, what qualifications/experience do you have to offer?

With your knowledge of the leisure/tourist business you may be an asset to a visitor attraction. You could contact The National Trust (separate one for Scotland too) and The Landmark Trust to see what remote jobs they have on offer. All their websites have a jobs section.

Do job searches for visitor-facing jobs. If you offer your services for less desirable shift patterns/opening hours, you may get ahead of the competition.
Hope this helps.

Sounds like you need a new girlfriend as a priority. Then looking for a more peaceful job can come second.
Seriously, why do you stay in this relationship if it's so stressful?
If you like the outdoor life, how about looking for a job with the Forresty Commission or National Trust, or Warden of a nature reserve? Or perhaps working on a ferry in one of the Scottish islands. If you're looking for a job which gives you a lot of mental space, you will need to be a very self sufficient person. Are you? Or are you just looking for an escape from a nagging woman?
