I have a raised bed with elephant garlic growing.
But as it’s a long term crop, can I plant lettuce in between?
If not what can I plant to take advantage of the space?

Slugs are a real menace - I spend summer evenings picking them off, the only remedy which works (although sunken beer trays are quite effective, but oh so messy).

I usually fill in with radishes, but I don't see why lettuce wouldn't be as good (not that I'm an expert, so be wary).

I was also thinking spring onions but slugs hate garlic so my lettuce would be safe

Most plants are good as companions for garlic and many actually benefit as you say due to the pungency. Salads and brassicas are great.

For some reason when I checked, there is a warning that Peas and Beans however, might not fair well at all in that environment.

I still have a dozen spring onions in my cold frame from September last year, I got 3 dozen knackered seedlings drone Homebase for 29p lol best 29p I have ever spent
Lettuce, radishes,cut and come again stir fry leaves, anything that matures quickly but so long as your rows are far enough apart for the sun to reach the garlic bulbs without being shaded too much
