Coronation Chicken

I’ve just made this with some leftover chicken from yesterday and I was wondering how people make theirs.
I used about four tablespoons of mayo, a dessert spoon of mango chutney, two fairly heaped teaspoons of hot curry powder, and a good handful of sultanas, stirred into enough chopped up cold chicken to make two very full sandwiches. It was delicious.

Sounds yummy. I probably would have only put 1 teaspoon of hot curry powder. :-)

To be honest patsy you could barely taste the curry, I think I’d add more if I make it again. Mind you, the curry powder I’ve had in the cupboard for a long time so maybe it’s lost some of its fire.
Just love Coronation chicken .... especially as filling in a jacket potato .... make it much the same as you Vagus + teaspoon of cinnamon and creme fraiche if available.
I'd use curry paste rather than powder...there's something about raw curry powder that I find unpleasant.
I suppose its trial & error. Could always add to it later I suppose. Enjoy..

Never thought of using it in a jacket potato, what a good idea. I have enough chicken to do it again tomorrow, that’s our evening meal sorted, thanks Haz.
Don’t think I’ve ever bought curry paste Ginge, I’m ok with the powder though so never had the need to.
Margo, it really was lovely, far nicer than the shop bought sandwich filler I occasionally buy, no comparison. It did make my mouth water :)
I'm going to give it a try next time I have some leftover chicken, I love jacket spuds too
