Santorini is the east half of a volcano, more or less: slopes up one side, cliff on the other. The other half exploded. It isn't really a resort destination like other Greek islands: it does have beaches but they're mostly black, volcanic sand; other islands are prettier. What it does have is stupendous views out over what remains of the crater, great sunsets, and some good ruins dug out from under the volcanic residue of an explosion about 2500 years ago. (They think this may be the one that destroyed the Minoan civilisation on Crete, and may also be the source of the legend of Atlanitis.) There are good hotels and probably good restaurants too, though the ones I ate at last time I was there (six years ago) varied from okay to crap.
IaP's hotel looks wonderful. This is the one I stayed at, also very good:

My mum and dad fell in love on Santorini and went back to get married, they're still together now, 23 years later. Im guessing that they enjoyed themselves, or they wouldnt keep going back. Everytime they go, its exactly how they left it, its not a very 'commercial' island so is very rural and typically greek.... I think you should go there... haha.
I have spend 2 seasons on the greek islands and numerous other holidays.
All of them are special in there own way.
Santorini is an amazing island with plenty to do and see, as you know the island is volcanic so the beaches are black not that this is a problem. It is also an ideal base for day trips to nearby islands.
Mykonos is another fanastic place and will always hold a place in my heart.
Ios is prob my fav, but I was young and its a big party island.
When I get married I will be going back to these islands on my honeymoon!
i love Greece!
