Chewy Ginger Snaps Recipe

A contradiction if ever there was, I am looking for a recipe for a Ginger Biscuit that are chewy rather than Snap crunchy - I have always known them as Ginger Snaps but the recipes I have found have made them crunchy - so does anyone out there in AB world have a yummy recipe for me to try?

Also I want to make them into shapes rather than rounds - wil they hold the shape when I bake them?
When I make Ginger Bread Men....4ozsbutter. 4ozs sugar, 8ozs SRflour, 3 teaspoons ginger, 1 tsp cinammon,1 tablespoon golden syrup,1 egg yolk....Rub fat into flour,add sugar,ginger,cinammon and syrup. Use the egg yolk to bind together. Dont roll out too thin. I always wondered why mine never crisped up, now I know because I dont follow the traditional method.
