INGREDIENTS
2 cups vanilla wafer crumbs
6 tablespoons butter, melted
1/4 cup sugar
FILLING:
4 (8 ounce) packages cream cheese, softened
1 cup sugar
4 eggs
1 cup sour cream
10 (1 ounce) squares white chocolate, melted
TOPPING:
1 cup sour cream
3 tablespoons sugar
1/2 teaspoon orange extract
2 (11 ounce) cans mandarin oranges, well drained
DIRECTIONS
Combine the first three ingredients; press onto the bottom and 1-1/2 in up the sides of a greased 10-in. springform pan. Bake at 350 degrees F for 10 minutes; cool completely.
In a mixing bowl, beat cream cheese, sugar, eggs and sour cream just until blended. Add chocolate. Pour into crust. Bake at 350 degrees F for 1 to 1-1/4 hours or until center is nearly set. Cool to room temperature, about 2 hours.
Combine sour cream, sugar and extract; spread over filling. Bake at 450 degrees F for 5-7 minutes or until set. Chill, uncovered, 1 hour. Arrange oranges on cheesecake. Cover and chill at least 4 hours.
Hope this will be good enough.

Or even easier.....
Mix a packet of soft cheese (philadelphia etc) with a medium tub of double cream whipped, add some caster or icing sugar to sweeten and as much melted chocolate as you want. Spread this over a base of melted butter mixed with crushed digestive biscuits (chocolate digestives if you're feeling exotic!) and refrigerate for a few hours. As this has no raw ingredients, it doesn't need cooking and you can taste it as you make it
