I am trying to devise a contact form on a website that when submitted does not rely on an email client (i.e. Outlook etc) to post the message to the designated recipient email address.

Submit the form details without relying on the user's email client. Try Cut and Paste Scripts http:\\www.cutandpastescripts.com or Bravenet http:\\www.bravenet.com to name just two. The major problem here is that these email relays are subject to misuse by spammers and there has to be a safeguard in the code to deter this.
With these utilities you set up a Web form to collect info on what your visitors are interested in (for example) and a return email address or snail mail address for brochure etc. and the all the submissions from a particular form get sent to an email address of your choosing.
